I am a gadget lady ! I LOVE all gadgets that can give me efficiency. The tool I use the most is without a doubt my INSTANT POT ! I just love that thing ! It gives me time ! You just prepare your ingredients and just dump them in and close the lid, and voila ! You can do whatever you want and don’t need to check it, stir it or even think about it. Total freedom !!!

We love to cook this recipe, because it is easy and there is no exact procedure to follow and we can vary the vegetables according to the season. In winter, we choose root vegetables and in summer we can go a little “funky” with zucchini.

We added tomatoes because now we have the chance to have them all year round! LONG LIVE THE LOCAL!

So get cooking and bring out the cook in you! Come on, it’s easy!

“The COVID-19 pandemic has sparked a huge increase in people interested in trying a plant-based diet—whether for their health or the health of our planet—but it has also sadly caused economic loss for many,” Veganuary US Director Wendy Matthews said. “This new study shows that people can protect their health, the planet, and their wallets with a plant-based diet.”
