Vegan pot roast

We love to cook this recipe, because it is easy and there is no exact procedure to follow and we can vary the vegetables according to the season. In winter, we choose root vegetables and in summer we can go a little “funky” with zucchini.

We added tomatoes because now we have the chance to have them all year round! LONG LIVE THE LOCAL!

Vegan pot roast recipe offered by État végétal.

Ingredients

454 g extra firm tofu
¼ cup kale, diced
2 medium tomatoes, diced
2 carrots, washed with peel, sliced
2 stalks celery, sliced
½ medium rutabaga, skinless, diced
2 large yellow potatoes, washed with skin, diced
1 medium onion, cut into large pieces
3 cloves garlic, finely chopped
1 tbsp tomato paste
3 sprigs thyme (optional)
2 sprigs rosemary (optional)
2 vegetable stock cubes (optional)
3-4 bay leaves
Fresh parsley
Water (2 inches from top of vegetables)
Olive oil, for cooking.
A good pinch of salt

Dry marinade

2 tsp garlic powder
2 tbsp onion powder
2 tbsp sugar
1 tbsp oregano

Cooking method

  1. In a bowl, prepare the dry marinade.
  2. Cut the tofu into large cubes, pat dry and coat with the dry marinade.
  3. Fry the tofu in a pan with a little olive oil.
  4. Add tomato paste and vegetable broth.
  5. Add onions and garlic, stir, cook for 2 to 3 minutes.
  6. Add all vegetables, cover with water, 2 inches above vegetables.
  7. Add rosemary thyme, bay leaves and salt.
  8. Cook over low heat, uncovered, for 1 hour and 15 minutes.
  9. Add fresh parsley just before serving.
